Apple muffins with crumble

Delicious apple muffins that is moist and rich in flavour. And too good to remember to take photo before eating it.


Made these of apples from the countryside in Sweden, which felt very autumn-y and nice.

Apples = fresh and fruity

Spices = cozy and round

These muffins = Fluffy perfection


Ingredients

Batter

  • Butter (room temp) (100g)
  • Brown sugar (100g)
  • White sugar (50 g)
  • Eggs (2)
  • Salt (1 tsp)
  • Flour (220 g)
  • Baking powder (1 tsp)
  • Baking soda (1 tsp)
  • Vanilla sugar (1 Tbsp)
  • Cinnamon (2 tsp)
  • Natural yogurt (1 dl)
  • Milk (1 dl)
  • Apples (2-3 (ca 230 g or to your liking))

Crumble

  • Butter (room temp) (70 g)
  • White sugar (1 Tbsp)
  • Brown sugar (1 Tbsp)
  • Flour (70 g)
  • Oats (80 g)
  • Cinnamon (1,5 tsp)
  • Cardamon (1,5 tsp)
  • Salt (0,5 tsp)

Instructions

  1. Turn on oven to 185°C.
  2. Mix the butter with the brown and white sugar until kinda fluffy. Preferably with electrical mixer.
  3. Add in the two eggs, and mix.
  4. Mix the dry ingredients and add into the sugar mixture.
  5. Add the yogurt, and then the milk, mix until smooth.
  6. Chop the apples into ca 1 cm big cubes (or what you prefer), and add those in too.
  7. Mix all the ingredients for the crumble (I find it easiest to do by hand) until it clumps when squished together but can be "crumbled" apart.
  8. Add muffin-liners to a muffin-pan and add in the mixture until 1 cm from the top, and add on the crumble on all the muffins.
  9. Bake in the oven at 185°C for ca 12-17 minutes (based on size etc) or until golden brown.
